Cheesy Green Onion Breakfast Muffins

Makes 6-8 muffins

Ingredients

  • 2/3 Cup cottage cheese

  • 1/4 Cup grated (or powdered) parmesan cheese

  • 1/4 Cup whole wheat flour

  • 2/3 Cup almond flour

  • 1 Tsp baking powder

  • 1/4 Tsp kosher salt

  • 4 eggs, beaten

  • 3 Tbsp water (optional if batter looks too thick)

  • 1/2 Cup cheddar (old or sharp cheddar is what I recommend!)

  • 2 Tbsp sliced scallions

  • Optional ingredients: garlic powder, cayenne pepper, seasoning salt, diced ham or bacon

Equipment you’ll need

  • Muffin tin

  • Paper muffin liners (optional but recommended for less mess)

  • Large mixing bowl

  • Spoon

  • Cooking Spray

Instructions

  1. Preheat oven to 400ºF

  2. In a large mixing bowl, combine cheeses, flours, baking powder, salt, eggs, and water.

  3. Mix until well combined, then fold in the cheddar and green onions.

  4. Line a muffin pan with six to eight liners. Coat the liners lightly with cooking spray.

  5. Spoon batter evenly between the muffin cups.

  6. Bake muffins 20-25 minutes or until lightly browned on top and set.

  7. After cooled, store in an airtight container and in the fridge.

  8. Enjoy!
