Cheesy Green Onion Breakfast Muffins
Makes 6-8 muffins
Ingredients
2/3 Cup cottage cheese
1/4 Cup grated (or powdered) parmesan cheese
1/4 Cup whole wheat flour
2/3 Cup almond flour
1 Tsp baking powder
1/4 Tsp kosher salt
4 eggs, beaten
3 Tbsp water (optional if batter looks too thick)
1/2 Cup cheddar (old or sharp cheddar is what I recommend!)
2 Tbsp sliced scallions
Optional ingredients: garlic powder, cayenne pepper, seasoning salt, diced ham or bacon

Muffin tin
Paper muffin liners (optional but recommended for less mess)
Large mixing bowl
Spoon
Cooking Spray
Instructions
Preheat oven to 400ºF
In a large mixing bowl, combine cheeses, flours, baking powder, salt, eggs, and water.
Mix until well combined, then fold in the cheddar and green onions.
Line a muffin pan with six to eight liners. Coat the liners lightly with cooking spray.
Spoon batter evenly between the muffin cups.
Bake muffins 20-25 minutes or until lightly browned on top and set.
After cooled, store in an airtight container and in the fridge.
