No-Bake Chocolate Cookies (Low-Carb)

Before I was diagnosed with Type-2 diabetes, I would make a version of this cookie with oats and coconut often. It was my go-to when I wanted to make something that was inbetween a cookie and a granola bar. And it was great when I didn’t want to turn on the oven.

It’s been years since I’ve made the full sugar with oats version, so I decided to try my hand at making a version that fits my dietary needs. And no oven or stove required! Just a microwave and a fridge or freezer.

So I took out the oats, replaced the sugar, and arrived at this! I love this recipe because you can use either a sweetener or sugar to make them. These cookies are so quick and easy to make whenever you have a craving for something chocolatey and coconut-y. They remind me of a macaroon (not a macaron) in a way too!

I also added in some hemp seeds for some extra nutrition, I imagine adding chia seeds would be a good addition too.


No-Bake Chocolate Cookie (Low-Carb) Recipe

Makes about 15 cookies.

Ingredients

Dry

  • 1 cup shredded, unsweetened coconut

  • 2 tbsp granulated sweetener of choice (I like this one)

  • 2 tbsp hemp seeds

  • 3 tbsp Dutch-processed cocoa powder

Wet

  • 2/3 cup natural, unsweetened peanut butter (your choice of smooth or chunky)

  • 1 tsp vanilla extract

  • 2 tbsp coconut oil or unsalted butter

Instructions

  1. Combine dry ingriendts in a bowl, mix until combined.

  2. Add wet ingredients together in a separate bowl.

  3. Microwave wet ingredients for about 30 seconds or until coconut oil is melted.

  4. Mix the wet ingredients together until combined.

  5. Add wet ingredients to the dry ingredients.

  6. Mix together until the wet ingredients are evenly distributed into the dry mixture.

  7. Scoop into approximately 1” round balls onto a baking sheet lined with parchment paper.

  8. Freeze the cookies for 20minutes or refrigerate for 2 hours.

  9. Enjoy!

Storage: These cookies are meant to be eaten straight out of the freezer/fridge. I’ve found that if they sit out at room temperature for too long, they melt back into their original batter consistency. After the cookies have hardened in the fridge they can be stored in a container.
